Vegan Chewy Ginger Cookies

Chewy ginger spice cookies are always a hit, especially when they’re vegan!

This cookie is thin like ginger snap cookies, but soft and chewy like a cookie should be with crispier edges.

INGREDIENTS IN VEGAN CHEWY GINGER COOKIES

– AP Flour  – Crystallized Ginger,  – Ground Ginger – Ground Cinnamon – Baking Soda – Ground Nutmeg  – Salt – Ground Cloves

HOW TO MAKE VEGAN CHEWY GINGER COOKIES

Preheat oven to 350°F. In a mixing bowl, mix the dry ingredients.

In another bowl, beat together butter, brown sugar, white sugar, and fresh minced ginger.

Drizzle molasses into the mixer bowl while mixing until the dough is fully incorporated. Be sure to scrape down the sides of the bowl.

Add the dry ingredients in two additions. Pour the milk in between each addition of dry ingredients.
