I learned that the key to a great flakey scone is all in the butter. Cold butter. When the little crumbs of butter melt as the scones bake, they release steam and create little pockets of air.
Combine eggs, heavy cream, cranberries, chocolate and orange peel and blend into the flour and butter mixture with a fork until just moistened.
Cut each circle into 6 wedges, brush with cream and freeze, uncovered on a baking sheet for 30 minutes.
