Simple and Easy Corn Muffins

Today, I decided to create my own simple and easy corn muffin recipe.

I decided if I was going to make a corn muffin, I wanted a perfect savory, sweet blend to conquer the great corn divide.

INGREDIENTS

– All-purpose flour  – Yellow corn meal  – Baking powder – Salt – Sugar – Chili Powder – Cheddar cheese  – Whole corn kernels

INSTRUCTIONS

– Adjust oven rack to middle position and heat over to 400°. Grease 12-cup muffin tin.

– Whisk flour, corn meal, baking powder, salt, sugar, and chili powder together in large bowl. Stir in cheddar, corn jalapeno and cilantro, breaking up any clumps.

INSTRUCTIONS

- Gently fold milk mixture into flour mixture with rubber spatula until just combined.
