Lemon Curd
In a blender or use a hand mixer to combine the sugar and lemon zest, until the zest is very fine. Add the lemon juice, then the milk and heavy cream.
Mix until the sugar dissolves and is smooth. Pour this into a medium sized bowl and stir in 2 tablespoons of lemon curd.
Cover with plastic wrap and let cool in the refrigerator for at least two hours or overnight, making sure enough cooling time has lapsed.
Follow your manufacturers instructions on your ice cream machine to process the ice cream. Once completed use a spatula to spoon into a freezer safe container.
Use a table knife or skewer to swirl in the remaining lemon curd. At this time, your ice cream will be a soft serve consistency.
