Sweet Potato  Bundt Cake

This moist and flavorful sweet potato cake has a wonderful cream cheese surprise in the middle.

These Sweet Potato Bundt Cakes can be frozen!

INGREDIENTS

– AP flour – baking soda – cinnamon – cloves – nutmeg – ginger – unsalted butter

I made individual Bundt cakes because I wanted to freeze the excess cakes and pull out a little snack once in a while after the holidays.

Preheat the oven to 350°F. Grease a 10" bundt pan or individual bundt pans with baking spray.

HOW TO MAKE THE SWEET POTATO BUNDT CAKE

Add egg, flour, vanilla, and continue mixing until smooth.

Combine cream cheese, butter and sugar until light and fluffy. 

In bowl of stand mixer fitted with paddle attachment, cream butter and sugar until light and fluffy.

If you are using a 10" Bundt pan, pour half of the cake batter into prepared pan.

Beat in eggs one at a time and then stir in vanilla, sweet potato puree and vegetable oil until combined.
