It's mango season, and I couldn't resist picking up a few mangos. This year, we came back from Hawaii with a love for mango bread, so I decided to whip one up now that we are back home.
Most of the ones on the islands use mango puree, but I love mango slices, so I decided to go with chopped mangos instead of mango purée. It's also a great way to use up any remaining ripe mangoes you may have.
Ingredients
All Purpose Flour
Baking Soda & Salt
Lime Zest & Juice
White Sugar & Light Brown Sugar
Egg
Buttermilk
Canola Oil
Honey
Almond Extract
Large Fresh Mango cut into about ½" mango chunks
Sliced Almonds
Substitutions
If you don't have almond extract, you could substitute it with vanilla extract.
If mango bread isn't your thing, we have a great chocolate banana bread that is just as easy.
Instructions To Make Mango Loaf Bread
- Preheat the oven to 350°F. Butter a 9 x 5 inch loaf pan (bread pan) or use cooking spray.
- Sift together flour, baking soda, and salt in a large mixing bowl. Add sugars and mix.
- Whisk the egg with buttermilk, oil, honey, almond extract, lime juice, and lime zest in a medium bowl.
- Pour the wet mixture into the dry ingredients and mix until just combined. You can use a stand mixer, hand mixer, or stir by hand with a spatula in a large bowl. Be sure not to overmix.
- Fold in the chopped mangos and almonds.
- Pour the batter into the prepared loaf pan.
- Bake the loaf for 50-60 minutes until a toothpick inserted into the center of the bread comes out clean. Let cool for 10 minutes in the pan, then remove the bread from the pan and cool completely on a wire rack.
Storage Of The Mango Bread
This bread has about a 5-day shelf life if you leave it on the counter once cooked. Be sure to keep it in an airtight container. You could also keep this in the refrigerator to get a couple of more days of life from it.
Mango bread freezes well. You can wrap it with plastic wrap and then cover it with foil or place it in a ziplock freezer resealable bag. Keep frozen for up to three months. When ready to enjoy, remove it from the oven and let it sit on the counter until thawed and ready to eat.
